INSTRUCTIONS:
Prepare the Lemon-Herb Chicken
- Combine lemon zest, lemon juice, parsley, basil, garlic, salt, and pepper in a small bowl
- Rub mixture generously over chicken thighs and let marinate for at least 20 minutes or up to 4 hours in the refrigerator.
- Heat oil in a skillet over medium-high heat. Sear chicken thighs skin-side down until crisp, about 4–5 minutes.
- Flip and cook for another 4–5 minutes, then reduce heat to medium and cover until cooked through. Set aside to rest.
Make the Sweet Potato Mash
- Boil or steam sweet potato cubes until fork-tender, about 12–15 minutes.
- Drain and transfer to a bowl.
- Add ghee, coconut milk, cinnamon, and salt. Mash until smooth and creamy.
Roast the Broccolini
- Preheat oven to 400°F.
- Toss broccolini with olive oil, orange zest, orange juice, salt, and pepper.
- Spread on a baking sheet and roast for 12–15 minutes until crisp-tender with lightly caramelized edges.
Assemble and Serve
Spoon sweet potato mash onto each plate, top with lemon-herb chicken thighs, and serve with citrus-roasted broccolini.
A squeeze of fresh lemon over the final dish brightens the flavors beautifully.
