Lemon-Herb Chicken Thighs with Sweet Potato Mash and Citrus-Roasted Broccolini

This bright, restorative winter dish brings together protein-rich chicken, immune-supportive citrus, and fiber-dense sweet potatoes for a deeply nourishing start to the new year. INGREDIENTS:

Lemon-Herb Chicken Thighs

• 1½ lbs Bone-In, Skin-On Chicken Thighs
• 1 Tbsp Olive Oil or Avocado Oil
• 1 Lemon, zested and juiced
• 1 Tbsp Fresh Parsley, chopped
• 1 Tbsp Fresh Basil, chopped
• 2 Garlic Cloves, minced
• ½ tsp Sea Salt
• ¼ tsp Black Pepper

Sweet Potato Mash

• 2 Large Sweet Potatoes, peeled and cubed
• 1 Tbsp Ghee or Olive Oil
• ¼ cup Coconut Milk
• ½ tsp Ground Cinnamon
• Sea Salt to taste

Citrus-Roasted Broccolini

• 3 cups Broccolini, trimmed
• 1 Tbsp Olive Oil
• Zest of ½ Orange
• Juice of ½ Orange
• Sea Salt and Black Pepper to taste


INSTRUCTIONS:

Prepare the Lemon-Herb Chicken

  1. Combine lemon zest, lemon juice, parsley, basil, garlic, salt, and pepper in a small bowl
  2. Rub mixture generously over chicken thighs and let marinate for at least 20 minutes or up to 4 hours in the refrigerator.
  3. Heat oil in a skillet over medium-high heat. Sear chicken thighs skin-side down until crisp, about 4–5 minutes.
  4. Flip and cook for another 4–5 minutes, then reduce heat to medium and cover until cooked through. Set aside to rest.

Make the Sweet Potato Mash

  1. Boil or steam sweet potato cubes until fork-tender, about 12–15 minutes.
  2. Drain and transfer to a bowl.
  3. Add ghee, coconut milk, cinnamon, and salt. Mash until smooth and creamy.

Roast the Broccolini

  1. Preheat oven to 400°F.
  2. Toss broccolini with olive oil, orange zest, orange juice, salt, and pepper.
  3. Spread on a baking sheet and roast for 12–15 minutes until crisp-tender with lightly caramelized edges.

Assemble and Serve

Spoon sweet potato mash onto each plate, top with lemon-herb chicken thighs, and serve with citrus-roasted broccolini.

A squeeze of fresh lemon over the final dish brightens the flavors beautifully.
