- 4 Salmon Fillets
- 2 Tbsp Extra Virgin Olive Oil
- 3 cloves Garlic, minced
- 1 Tbsp Fresh Lemon Juice
- 1 tsp Fresh Rosemary, finely chopped
- 1 tsp Fresh Thyme, chopped
- ½ tsp Paprika
- Sea Salt and Black Pepper, to taste
- 1 Tbsp Fresh Parsley, chopped
- Lemon wedges, for serving
Roasted Sweet Potatoes & Broccoli
- 2 Medium Sweet Potatoes, peeled and cut into 1-inch cubes
- 4 Cups Broccoli Florets
- 2 Tbsp Extra Virgin Olive Oil
- ½ tsp Garlic Powder
- ½ tsp Ground Turmeric
- Sea Salt and Black Pepper, to taste
- 2 Tbsp Pumpkin Seeds, optional
INSTRUCTIONS:
Roast the Sweet Potatoes
- Preheat the oven to 425°F.
- Toss the sweet potato cubes with 1 tablespoon of olive oil, garlic powder, turmeric, sea salt, and black pepper.
- Spread the sweet potatoes onto a parchment-lined baking sheet and roast for 15 minutes.
Add the Broccoli
- While the sweet potatoes begin roasting, toss the broccoli florets with the remaining olive oil, sea salt, and black pepper.
- Remove the baking sheet from the oven and add the broccoli alongside the sweet potatoes.
- Return to the oven and roast for another 15 to 20 minutes, until the vegetables are tender and lightly caramelized.
- Sprinkle with pumpkin seeds during the final few minutes of roasting if using.
Prepare the Garlic Herb Salmon
