- Zest of 1 Lemon

- Sea Salt and Black Pepper, to taste
Roasted Sweet Potato Hash
- 2 Medium Sweet Potatoes, diced
- 1 Tbsp Extra Virgin Olive Oil
- ½ tsp Smoked Paprika
- ½ tsp Garlic Powder
- ½ tsp Onion Powder
- Sea Salt and Black Pepper, to taste
- 2 Tbsp Fresh Parsley, chopped
Blueberry Arugula Salad
- 3 cups Fresh Arugula
- 1 cup Fresh Blueberries
- ¼ cup Crumbled Goat Cheese (optional)
- ¼ cup Chopped Walnuts or Pecans
- 2 Tbsp Thinly Sliced Red Onion
Lemon Dijon Dressing
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Fresh Lemon Juice
- 1 tsp Dijon Mustard
- 1 tsp Raw Honey (optional)
- Sea Salt and Black Pepper, to taste
INSTRUCTIONS:
