18 Oct Green Goddess Salad Dressing
Ingredients:
Serves 1-4
• 1 garlic clove
• 1 large egg yolk
• 2 tbsp plus 1/2 cup light-tasting olive or avocado oil
• 2 anchovy fillets or 2 tbsp anchovy paste
• 1/4 cup (packed) fresh parsley leaves
• 2 tbsp dried chives
• 1 tbsp dried tarragon leaves
Steps:
• Smash and peel garlic clove, place in the jar
• Add in egg yolk, 2 tbsp olive oil, lemon juice and anchovies
• Blend until pureed
• Add in 1/2 cup oil and blend until thickened
• Mince parsley and stir into the dressing, along with chives and tarragon
• Place in refrigerator to chill
